Little Italy Farm House Salad

Im super excited to share this delicious recipe with you!  One of my Health and Fitness goals this summer is to keep food a celebration wile still committing to my weight loss journey.   My success has been found enjoying real food and not too much of it.  I want to crave my intentional meals, not my cheating snacks.  So here I am creating hearty and healthy recipes to fill out my menu!  I hope you and your family enjoy this salad as much as I am!

Little Italy Farm House Salad

In a large bowl add

1 cup cherry tomatoes cut into quarters

1 1/2 cup chicken brest

1/4 cup sliced olives

1/4 cup baby mozzarella  

1/4 cup sundries tomato cut into slices

1.2 cup chives or shallots

2 cups fusilli cooked

Dressing 

3 Tbsp. greek yogurt

3 tsp. basil pesto

Stir yogurt and pesto and add to bowl.  Mix with a soft spatula till everything is coated.  Add

2 big handfuls of baby greens and toss till all mixed up.

 

Serves 4-6
